創業1918年

創業した百年前から家族で営むこじんまりとした蔵元。仕込み蔵は今も変わらずとても小さいが、少ない人手でこまごまと目を配るにはちょうどいい程度という。 

酒蔵の前には、先祖伝来の田んぼがのそりと横たわっている。寒梅酒造のお酒は、その2割に自社田育ちの酒米を使用している。「美山錦」「愛国」「ひより」「山田錦」の4種類の酒米を手がけている。 自らの手で稲の世話をあれこれと焼き、米をよく学び、米をよく整え、そうして思い描くお酒の旨さに近づきたいと切に願って米作りも行う。うまくいかない年もあるが、うまくいく年が増えてきたと。

自社米の他は全て宮城県産の米を使用。地元を支え、盛り上げてゆく一助になりたいと考えている。酒通が口にして味わい深く、また初めての方がのんでもすぐに美味しく。どちらも私たちの目指す宮寒梅だという思いで酒造りを行なっている。

KANBAI SHUZO

Overview

Kanbai Shuzo is a small family run brewery founded in 1918. Its kura (a brewery) is quite small, but enough for a few sake-makers to check the detail.

In front of the brewery, there are rice fields which have been passed down for generations. They cultivate 4 types of rice there; Miyama Nishiki, Aikoku, Hiyori, and Yamada Nishiki. These in-house rice are used for 20% of Kanbai Shuzo’s sake. Learning and taking care of their own rice, the main ingredient of sake, are essential to brew their ideal Japanese sake. It is not easy to create great rice, but they have been doing well in recent years.

The rice for their sake is all from Miyagi Pref. including its in-house rice. They would like to support locals and revitalize the community. Kanbai Shuzo brews its signature sake, Miyakanbai, hoping both a connoisseur and a beginner of sake love it.
