良い米と良い水から造る純米酒は、自然の恵みを生かし、丁寧につくられているので、口に含んだ瞬間、緑豊かなの里山の風景が思い浮かぶような、お日様と田んぼの恵みを感じられるお酒。
そして、理想の酒は、外行きではない普段着のような感覚で、気の合う仲間とコミュニケーションをとりながら、肩肘張らず気軽に楽しめる酒です。毎日着られて心地のいい、カジュアルでありながらも上質なTシャツのような酒を醸したいと考えておられます。
美味しいお酒を造るには環境も大切と考えられている杜氏。
あらゆる菌が入り込まないように蔵の床には水一滴ないほど綺麗にされています。
杜氏は火入れに拘り、【火入れを制する者は日本酒を制する】と断言されています。
火入れのタイミングにより火入れにより、よりよいお酒造りになるとのことです。
火入れはしていますが商品は要冷蔵になります。

These are the concepts of Hagino Shuzou. Hagino Shuzou adopts new technologies as well as cherishes the tradition and history of Japanese sake. Sake making by Hagino Shuzou aims to continue evolving.
Its junmai sake is carefully made from good rice and good water. Once you drink it, it reminds you of a scenery of a lush green woodland, and you can feel the blessings of the sun and rice fields.
Their ideal sake is one that you can enjoy casually wearing everyday clothes while chatting with your best friends. They try to brew sake like a classy but casual T-shirt which is comfortable to wear every day.
A toji (a chief sake maker) at Hagino Shuzou believes that a good environment is essential for wonderful sake. The floor of brewery is always kept clean without even a water drop so that none of the bacteria can get in. A toji is also committed to hiire (heat sterilization), and says “A person who does awesome hiire makes awesome Japanese sake”. The good timing of hiire leads to the better sake making.
*Hagino Shuzou’s sake is sterilized, but please keep refrigerated.
